#1: Wookey Hole Cave Aged Goat’s Cheese

Amazingly, the Wookey Hole cave system is now owned by Gerry Cottle of ringmaster fame... He has been instrumental in the revival of the use of the caves for maturing cheese. The temperature is a perfect, a humid 11 degrees all year round. Well known for its cheddar, this goat’s version is a new addition and rather tasty. (V+P)

#2: Ashcombe

Inspired by the recipe of the French Morbier with a line of wood ash running through the centre of the cheese. Made by David Jowett from his Manor Farm in the Cotswold village of Chedworth, Gloucestershire, from their mixed herd of traditional British breeds, including the Dairy Shorthorn, who feed on pastures planted with plentiful clover and herbal leys for an aromatic richness.The rind is carefully washed in a special brine solution to develop a bright terracotta hue. #3: Délice de Bourgogne

A French cow’s milk cheese from the Burgundy region of France. It was first created in 1975 by Jean Lincet at Fromagerie Lincet. It’s a triple cream cheese! EXTRA double cream is added during the cheese-making process. Hailing from the stunning Burgundy region of France, this isn't just cheese, this is pure, unadulterated indulgence. #4: Tomme des Pyrenees

A semi-hard, cow's milk cheese from the Pyrénées region in France matured fora  minimum of 21 days before consumption. Appreciated for its supple texture and buttery, salty, earthy taste with slight hints of sourness and undertones of mushrooms. Rustic, nutty and delicious.  (nV+P)

#5:  Perl Des Alpes

Matured for 9 months, this cheese develops a balanced, slightly nutty flavor. It combines the depth of ripe milk with a subtle spiciness that unfolds harmoniously on the palate, perfect for connoisseurs of balanced flavors. This is a Swiss cheese made in the Alpine tradition according to ancient methods shared right across the Alpine region - it symbolises the shared heritage and craftsmanship of the Alps. (nV+nP)
