Summer is for cheese that is lighter, easier, fresh, unctuous and indulgent - without being hefty. #1:  Mahon

Mahón is the undisputed rockstar of Menorca. Crafted from the milk of Mahón-Menorca cows, it’s a cheese with attitude. While the younger wheels are approachable, the mature Mahón is a force of nature. Aged for months, it develops a deep, dark orange rind—often rubbed with oil, butter, and paprika—and a texture that crumbles with delight. The flavour?
